Velocity if you're starting fresh — it's the fastest and actively developed. Waterfall if you need BungeeCord plugin compatibility with fewer bugs. BungeeCord only if a plugin you depend on requires it.
Do I still need normal Minecraft servers behind the proxy?
Yes — the proxy is a router, not a world. Each game mode (survival, creative, minigames) runs as its own Minecraft server; the proxy connects them under one address. You can host all of them here.
How much RAM does a proxy need?
1 GB is enough for most networks — proxies forward traffic rather than simulate worlds. Scale the backend servers instead.
